Cooking Italian pasta salad:
Step 1: prepare the pasta - the first stage.
First of all, you need to cook pasta. Therefore, we pour ordinary cold water into the middle pan so that it half-fills the container, and put on medium heat. Cover the pan with a lid. So the liquid boils faster. As soon as this happens, slightly salt the water, mix everything well with a tablespoon and gently pour the pasta. When the liquid boils again, reduce the heat and cook the component for 15-25 minutes depending on its grade. Attention: the cooking time of the pasta must be seen on the packaging, as it may vary. Do not forget to mix everything every 5 minutesso that the pasta does not stick to the bottom of the pan.
After the allotted time, turn off the burner and, holding the pan with kitchen tacks, drain its contents through a colander into the sink. Rinse pasta immediately under running cold water so that they do not stick together. Pour them back into the pan and leave to cool for a while aside.
Step 2: prepare the parmesan cheese.
Using a medium grater, we turn the Parmesan cheese into chips and pour it into a free plate.
Step 3: prepare the pasta - the second stage.
When the pasta has cooled, pour them into a medium bowl. Add here 2/3 parts grated parmesan and pesto. Using a tablespoon, mix everything thoroughly and cover tightly with a pan lid. We put the pasta in the refrigerator to insist a little and cool, and for now we will prepare the remaining ingredients.
Step 4: prepare the sauce.
Pour mayonnaise, sour cream and milk into a small bowl, and pour a little salt and ground black pepper. Mix everything thoroughly with a hand whisk until a homogeneous mass is formed. Attention: the sauce should be a little thin. This is necessary in order to make the pasta softer. We leave the ready-made dressing aside to insist.
Step 5: prepare the pine nuts.
Important: pine nuts are not necessary to add to the salad. But if you are a fan of such a component, then you need to do this. Pour the nuts into the pan and put the container on medium heat. Stirring all the time with a wooden spatula, fry them until a faint, pale brown color. Immediately after that we turn off the burner and set the pan aside.
Step 6: prepare lettuce leaves.
Thoroughly rinse the lettuce leaves under running water and spread on kitchen paper towels. When the component dries, move it to a clean plate. Attention: if desired, greens can be torn into pieces with clean hands or cut with a knife on a cutting board.
Step 7: Prepare Mozzarella Cheese
We spread the mozzarella cheese on a cutting board and, using a knife, cut into small cubes. The crushed component is moved to a free plate and temporarily set aside.
Step 8: prepare the cherry tomatoes.
We wash the tomatoes under running water and put them on a cutting board. Using a knife, we cut the component into two halves and move it to a clean plate.
Step 9: prepare the olives.
You can not chop olives, but add them to the salad. In that case, if the component is very large, then put it on a cutting board and cut it into several parts with a knife. Shredded olives are transferred to a clean plate and proceed to the preparation of the salad.
Step 10: prepare an Italian pasta salad.
In a salad bowl or deep special plate, lay the salad leaves with the first layer. Then we get the pasta from the refrigerator and pour them into a common container.
Now add the mozzarella cheese cubes, halves of cherry tomatoes and olives to the salad bowl.
Well, pour everything with sauce, sprinkle with the remaining Parmesan cheese and pine nuts. Everything, the Italian salad is ready!
Step 11: serve the Italian pasta salad.
