Cooking lazy khachapuri with cheese:

Step 1: prepare hard cheese.

First of all, we take hard cheese, it can be Mozzarella, Grana Padano, Pekkorino, Cheddar, Dutch, or the one you like best. Rub this product on a fine grater into a small bowl and put the rest of the products on the kitchen table.

Step 2: prepare the cheese mixture.

Now put the chicken egg in a deep bowl and beat it with a whisk until splendid. Then add sour cream, chopped cheese, sifted wheat flour, black pepper and salt to taste. Thoroughly mix everything to a homogeneous consistency with a wooden kitchen spoon and proceed to the next step.

Step 3: fry the lazy khachapuri with cheese.

We put on a moderate fire a small frying pan (preferably with a Teflon coating) and pour about half a tablespoon of vegetable oil into it. In a few minuteswhen it is hot, put the cheese mixture in there and level it with a kitchen spatula so that we get a flat pancake of uniform thickness. Then we reduce the fire to a level between the smallest and the middle. Cover the pan with a lid and cook khachapuri on one side for 8-10 minutes or until the middle of the pancake seizes, that is, it becomes more dense.

Then, using a kitchen spatula, turn it over to the other side and fry it until golden brown 5-7 minutesbut without the lid.

The degree of rosy is adjustable to taste. In the last minutes of cooking, you can cover the khachapuri with a plate, due to this it will be better fried inside, but it will not be steamed like under a lid. When the pancake is browned on both sides, put it on a large flat plate, carefully cut into 4-6 parts and serve.

Step 4: serve the lazy khachapuri with cheese.

Lazy khachapuri with cheese is served immediately after cooking in hot or warm form. The cake is cut into portions and served with hot, sweet and sour or spicy sauces. This dish is an ideal complement to dishes of meat, fish, poultry, as well as game. Enjoy delicious and easy-to-cook food!

Recipe Tips:

- you can fry in a Teflon pan without oil, but tastier with it;

- very often cheese is combined with cottage cheese in equal proportions;

- optionally chopped greens of dill, parsley or green onions can be added to the cheese mixture;

- sometimes the cheese mass is laid out in parts on a frying pan and small khachapuri pancakes are fried.
