Cooking mashed potatoes with fried onions:
Step 1: Prepare the potatoes.
The most delicious mashed potatoes are obtained from friable varieties of potatoes, for example, from the blue eyes. And of course, when cleaning, it is necessary to remove all damaged places so that they do not fall into the mash. Potatoes cut into small pieces are most quickly boiled.
We put it in a pan, fill it with water and set it to cook on medium heat. Water can be slightly salted and a peeled and crushed clove of garlic can be added. After 15-20 minutes, the potato will be ready. The easiest way to check this is to poke a fork into the largest piece. Fell apart? Great, you can drain the water and mash. If in doubt of readiness, let it boil for about 10 minutes. Raw potatoes are not the best option for making mashed potatoes.
Step 2: Prepare the onion and cheese.
Cheese does not require any special preparation. Just rub it and put it on a plate.
Peel the onion and cut into rings about a half centimeter wide.
Pour flour on a plate and roll them on all sides. It remains only to fry the onions, but this will need to be done quickly, immediately after making the mashed potatoes.
We put a frying pan with high sides on the stove, pour refined vegetable oil (a layer of about 1.5-2 centimeters) and heat it up a lot. Put onion rings and fry in boiling oil until golden brown.
Carefully remove them with a fork and put them on a plate with a paper towel, which absorbs excess fat.
Step 3: Make mashed potatoes.
Is the potato ready? Turn off the fire. Do not drain the water yet. First you need to heat the milk to a boil. Important! Never add it cold. The potato will cool quickly and turn gray.
Now drain the broth from the pan, pour in a little hot milk and crush the mashed potatoes.
Add the butter, continue to pour the milk in small portions and beat the potatoes with a mixer into a homogeneous, lush mass. Salt it to taste. Mashed potatoes are ready, you can serve.
The amount of milk can be reduced or increased, focus on your taste. The main thing - do not forget that after 10 minutes the mashed potatoes will be much less liquid.
Step 4: Serve mashed potatoes with fried onions.
Mashed potatoes are served immediately after cooking. Lay it in plates, sprinkle with grated cheese on top and put the fried onions.
