Ingredients for Making Soup with Dumplings and Meatballs

Cooking soup with dumplings and meatballs:
Step 1: Prepare the vegetables.
Preparing vegetables is very, very simple. Peel onions and carrots. Cut the pepper in half, remove the stalk and seeds. I wash all the vegetables and cut them into small cubes, except for garlic. We remove the husk from it and chop finely.
I think you noticed that the potato is not listed in the list of ingredients. If you cook on the broth, you can do well without it. Soup will be tasty, light and nutritious anyway. If the broth is tense, then you can cook with potatoes. Take 3-4 medium tubers, peel them, wash them well and cut them into medium cubes.
Step 2: Making Meatballs
Minced meatballs are best prepared at home. The storefront is most often very greasy. Any one will do: chicken, beef or pork. Pass the meat through the meat grinder at least twice, so that the meatballs turn out homogeneous and tender.
Add the egg, half a teaspoon of salt, 1/4 teaspoon of ground black pepper to the minced meat and mix well. It should be a plastic homogeneous mass.
Now we will sculpt small meat balls - future meatballs. It is easiest to do this with wet hands so that the mince does not stick, so put a glass or some other container of water next to it. Take small lumps of minced meat and roll balls the size of a cherry or small apricot. Too large meatballs can fall apart during cooking. Put them on a clean, dry cutting board.
Step 3: Make the dumpling dough.
There is no universal recipe for making dough for dumplings. Each hostess does this in her own way. It can be on water or only on eggs. I like the last option more. Homemade dumplings are beautiful yellow.
So, prepare the dough for dumplings. Sift the flour before cooking, beat the eggs a little with 1/4 teaspoon in a homogeneous mass. Knead a thin plastic dough. The amount of flour in the recipe is approximate. The eggs are of different sizes, and the flour is of different humidity, so we add it, how many eggs will take to get the necessary consistency. We cover the dishes with the dough with cling film and leave to wait for their turn.
Step 4: Cook the soup with dumplings and meatballs.
For the two cooking options for the soup, with and without potatoes, the cooking sequence will be slightly different.
If cooking with potatoes, put a pot of water on the stove, bring to a boil and lay it to cook. Salt a little and cook over medium heat for about 10 minutes. At this time, heat a small amount of butter or vegetable oil in a pan. Spread all the prepared vegetables, sauté for 5-7 minutes and send them to the potatoes.
If we cook without potatoes, all vegetables are heated in melted butter immediately in a saucepan over low heat for about 5-7 minutes. Then fill everything with hot broth. This is where the differences ended, then the cooking process is the same: salt to taste and add spices.
First add meatballs to the soup, after all, the meat is cooked longer than the dough. As soon as they emerge, then the dumpling line has come.
We make dumplings very simply: we take a little dough with a wet teaspoon and send it to the pan. In principle, it should slide off easily, if it is not, we will help him with another spoon. It should be noted that the process is lengthy and requires patience. Resist the temptation to take the dough in larger pieces to speed it up. In the soup, dumplings increase in size at least one and a half times. After they pop up, cook over low heat for about 5 minutes. Then turn it off, pour the chopped parsley greens into the pan, cover with a lid and leave to insist. The dumpling and meatball soup is ready.
Step 5: Serve the soup with dumplings and meatballs.
Pour the soup into plates and serve. Fans of creamy taste can try adding a spoonful of sour cream to it. A good addition to the soup will be crispy croutons or croutons with garlic.
