Bagels with filling


Stuffed Bagels

For the test:

  1. Milk 200 milliliters

Cooking bagels with filling:

Step 1: prepare the flour.


To make the dough soft and airy, you need to prepare the flour. To do this, pour it into a sieve and sift it into a clean bowl. Thanks to this process, the component will be saturated with oxygen and get rid of possible lumps.

Step 2: prepare the milk.


Pour milk into a Turk or a stewpan and put on a small fire. Attention: to prepare the dough, you need to slightly warm the component. It should be warm, but by no means hot. Immediately after that, turn off the burner, and pour the milk into a free medium bowl.

Step 3: prepare the dough.


Pour dry yeast into a bowl of warm milk and 1 tablespoon Sahara. Mix everything thoroughly until smooth and leave aside to insist for 15 minutes. During this time, the mass should slightly swell.

Pour into a container immediately afterwards. 150 grams sifted flour, beat thoroughly with a hand whisk until a homogeneous mass is formed and continue to insist 15-25 minutes. Now our dough will have to increase by about 2 times.

Step 4: prepare butter or margarine.


Put butter or margarine on a cutting board and cut into small pieces with a knife. The crushed component is transferred to a clean saucer and set aside to warm to room temperature. Attention: To prepare the dough, the oil must be soft.

Step 5: prepare the egg-sugar mixture.


Using a knife, break the eggshell, and pour the yolks with squirrels into a small bowl. Pour the remaining sugar here and, using a hand whisk, beat the ingredients until a homogeneous, thick mixture is formed.

Step 6: prepare the dough.


Pour the egg-sugar mixture into the dough and carefully beat with a hand whisk until smooth. Immediately after this, add softened butter to the container and mix everything again. Then, in small portions, we begin to pour 300-350 grams flour, whisking at the same time with improvised inventory so that no lumps form. When the dough is ready, cover it with a cloth towel and leave it in a warm place for 30-40 minutes. Over this period of time it should increase 2 times.

Step 7: prepare the almonds.


Put the almonds in a blender bowl and chop at medium speed. Immediately after that we add to the container 1-2 tablespoons of sugar and mix everything again for 1-2 minutes. Pour the finished nut filling into a clean saucer and leave it aside for a while.

Step 8: prepare the apples.


We thoroughly rinse the apples under running water and put them on a cutting board. Using a knife, we clean the component from the skin and then cut it into two halves. From each part we remove the core. Now cut the apples into small pieces and transfer to a free plate. Add a little sugar to the same container and mix well with a tablespoon.

Step 9: prepare the bagels with the filling.


After the dough rises, transfer it from the bowl to the kitchen table, crushed with a little flour. We knead it several times with clean hands so that carbon dioxide, which is formed due to yeast, comes out of it. Now pour the remaining flour onto the surface of the dough and continue to mash until it becomes elastic. Attention: the dough should not be very steep and stick to your hands. We cut it into three parts and give each shape to a ball.

Now we take turns rolling out a flat cake from each ball using a rolling pin. Important: formation thickness should not be more 2-3 millimeters.

Using a knife, cut each circle from the center to the edge into 8 parts. We should get small triangles from the dough. On each wide edge we spread 1 teaspoon different fillings. Now, in turn, wrap poppy seeds, nuts and apple slices in the dough. You need to start from a wide edge to a narrow one. We should have beautiful bagels. And so that they do not turn around during baking and the filling does not start to fall out, we press the edges lightly with our hands.

Cover the baking sheet with baking paper. We spread the bagels on the surface, while at a small distance from each other. Attention: if desired, the pastries can be lightly sprinkled with sugar. Now put the pan in the oven, preheated to a temperature 180 ° C, and bake for 25-30 minutes. During this time, bagels should be covered with a golden crust and swell. Then we turn off the oven, and we take out the container from there with the help of kitchen gloves and set aside.

Step 10: serve the bagels with the filling.


We transfer ready-made, still warm bagels with the filling to a special plate and serve to the dessert table along with tea and coffee. Baking is fabulously delicious and delicate, so it bursts behind the ears!

- the dough can also be made from fresh yeast. For so many ingredients indicated in the recipe, we need 25 grams;

- for the filling, you can use any components. For example, it can be jam, condensed milk, pieces of various fruits, berries, as well as liquid chocolate;
