Cooking curd cake without baking:

Step 1: prepare the butter.


Take the right amount of butter, remove the packaging from it, cut into cubes, transfer to a small saucepan and put it on medium heat. Melt the dairy product to a liquid consistency, remove from the stove and cool slightly.

Step 2: prepare a mixture of butter and cookies.


In the meantime, spread shortbread cookies, previously broken into pieces, into a clean and dry blender bowl and grind it into small crumbs. After that, pour it into a deep bowl and pour almost cooled oil there.

Using a tablespoon, thoroughly mix the dry and liquid ingredients to a uniform consistency and proceed to the next step.

Step 3: form the first layer of the cake.


Using kitchen scissors, we cut out a circle from a sheet of baking paper, put it on the bottom of the mold and fix it with a removable side, so that it lies flat. Then put a mixture of butter and cookies on paper.
Then it all depends on your desire, you can ram it with one even layer or make small sides on the sides, which will greatly facilitate the removal of the finished cake and its slicing.
After that we tighten the shape with plastic wrap and set in the refrigerator while cooking the filling.

Step 4: infuse gelatin.


Now pour a couple tablespoons of gelatin in a deep plate, pour them with purified cold water and give it the opportunity to swell well over 10-15 minutes.

Step 5: prepare the lemon.


Then we wash the lemon under cold running water, dry the citrus with paper kitchen towels and rub its zest directly into a small bowl with a small grater. Preferably take off only the upper yellow layer of the skin, in the white part contains a small percentage of limonin. This substance can give an unpleasant bitter aftertaste to the finished dessert!

Step 6: heat the gelatin.


After that, we return to gelatin, pour it with water into a clean stewpan, put on a small fire and heat the liquid up to 40-50 degreesstirring constantly with a tablespoon or whisk. In no case do not boil!
As soon as the gelatin granules dissolve, remove the stewpan from the stove and cool its contents to room temperature.

Step 7: prepare the curd mixture.


While gelatin cools, put in a deep bowl cottage cheese, sour cream, sugar, lemon zest and liquid vanilla extract. Beat these products with a submersible blender or mixer at the highest speed. Should get uniform mixture without cottage cheese and sugar grains, resembling a cream of medium density.
As soon as it takes the desired structure, pour the cooled gelatin into a bowl with a thin stream, while mixing everything to a uniform consistency.

Step 8: bring the dessert to full readiness.


Next, we take out the form with the first layer of cake from the refrigerator, remove the film from it and pour the curd mixture there. We level it with a metal kitchen spatula so that it lies evenly.
Again we tighten the mold with food-grade polyethylene and set in the fridge on 4-5 hours or all night.

After the required time, you can taste the cake, and before that, decorate it to taste.

Step 9: serve the curd cake without baking.


Curd cake without baking is served after complete cooling, it is taken out of the refrigerator, removed from the form of the side and, holding the ends of the baking paper, transferred to a large flat dish.

Before serving, you can decorate the cake with fresh or canned fruits, berries, pour honey, jam, jam, condensed milk, and sprinkle with ground cinnamon, cocoa powder or grated chocolate. Enjoy it!

Recipe Tips:

- chopped nuts or dried fruits can be added to the mixture of cookies and butter;

- instead of liquid vanilla extract, you can use vanilla sugar or vanillin, but the last version of this spice should be added very carefully, since in its pure form it is very bitter;

- lemon zest is ideally replaced by orange;

- very often fruit or berry puree is added to the curd mixture, as well as a couple of tablespoons of cocoa-powder and form several layers for a cake with a different taste.
