Preparation of German Potato Salad with Bacon:
Step 1: prepare the potatoes.
Using a kitchen sponge or brush, thoroughly rinse the potatoes with the peel under running water to remove all kinds of dirt.
Then put the component in a large pan and fill it with water so that it completely covers the tubers. We put the container on medium heat and cover it with a lid. When the liquid boils, make the fire less than average and cook the potatoes until cooked. Attention: it should never be digested, since the potato must keep in shape when we cut it into pieces. It is for this reason that through 20 - 25 minutes check the component with a fork. If it can easily pierce a component, then it is ready and you can turn off the burner. It is also important to note that the lower tubers boil a little faster in time than the upper ones.
We still spread hot potatoes with a tablespoon on a cutting board. Let it cool slightly and after carefully remove the peel. Cut the peeled tubers into thin slices and move them into a free deep bowl.
Step 2: prepare the onions.
Using a knife, peel the onions from the husks and rinse thoroughly under running water. We lay out the component on a cutting board and finely chop it with squares. Then pour the chopped onion into a free plate.
Step 3: prepare the bacon.
Put the bacon on a cutting board and chop it into thin strips with a knife no more than 4 centimeters. Finely chopped meat is transferred to a clean plate.
Step 4: prepare the green onions.
We wash the green onions under running water, shake off excess liquid and put on a cutting board. Using a knife, finely chop the component and then pour into a clean plate.
Step 5: fry the bacon with onions.
Put slices of bacon in a pan and put the capacity on the fire less than average. From time to time, stirring it with a wooden spatula, fry well and let the fat melt.
When the meat is covered with a golden crust, pour finely chopped onions into the pan. Attention: if necessary, add a little vegetable oil. Once again, we thoroughly mix everything with improvised inventory and continue to cook the components until the last of them becomes soft. Immediately after that, turn off the burner, and set the capacity aside.
Step 6: prepare a dressing for potatoes.
Pour meat broth into a deep bowl, and add mustard, vinegar, salt to taste and more black pepper. Attention: the amount of ingredients for dressing can be determined "by eye". Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed.
Step 7: prepare a German potato salad with bacon.
Pour a little dressing into a bowl with potato slices and gently mix everything with a tablespoon or wooden spatula. The liquid absorbs quickly. After this, add a little more dressing and look: if the potatoes are wet enough, then you do not need to add more, if it is still dry, continue to pour the liquid. Then pour the fried bacon with onions, chopped green onions into the container and again carefully mix everything with the improvised inventory. We taste the salad. If there is not enough salt and black pepper, then we add these components. That's it, the German salad is ready, so you can serve it to the dining table.
