Preparation of hodgepodge in Kazakh:
Step 1: prepare onions.
Using a knife, peel the onion from the husk and rinse thoroughly under running water. We lay out the component on a cutting board and cut into squares. Pour the chopped onion into a clean plate.
Step 2: prepare the pickles.
To prepare the hodgepodge, it is best to take pickled cucumbers, as they have more acid, so the dish will turn out tastier and juicier. So, using a knife, peel the vegetable from the peel and put it on a cutting board. Cut it along into 4 parts. Remove seeds from each piece and then chop into slices. The finely chopped component is transferred to a free plate.
Step 3: prepare boiled beef with beef tongue.
Put the boiled beef tongue with beef on a cutting board and, using a knife, cut into small pieces. Then we pour the components into a free plate and leave it aside for a while.
Step 4: prepare smoked lamb sausage.
We lay the lamb sausage on a cutting board and remove the protective film from its surface with a knife. Now grind the component into small pieces and transfer to a free plate.
Step 5: prepare smoked lamb or kazy.
Kazi is a sausage that is made from horse meat and is considered a delicacy among some Turkic peoples. This component can be replaced with smoked lamb. In any case, the hodgepodge will turn out tasty, since all these components are quite juicy and fatty. So, put the smoked meat on a cutting board and chop it into small pieces with a knife. Pour the chopped lamb or kazy into a free plate.
Step 6: prepare the parsley.
We wash the parsley under running water, shake off excess liquid and put it on a cutting board. Using a knife, finely chop the herbs and pour into a clean saucer. Attention: for 1 serving of hodgepodge, we need 1 teaspoon of chopped parsley.
Step 7: prepare the hodgepodge in Kazakh.
Put ghee in a pan and put on medium heat. When the container with the contents warms up well, pour the chopped onion into it. From time to time, stirring everything with a wooden spatula, pass the vegetable for 5 - 6 minutes. After the allotted time, we pour the tomato puree into the pan, again mix everything thoroughly and continue cooking more 5 - 7 minutes. After the allotted time, turn off the burner, and set the capacity aside.
Now pour the meat broth into the pan. We put the container on medium heat and wait for the liquid to boil. Immediately after that, carefully spread the chopped cucumbers, the onion with tomato paste, as well as the chopped beef with beef tongue, smoked sausage and kazy into the pan. To taste, add black pepper, peas, bay leaf and salt. Mix everything thoroughly and wait for the hodgepodge to boil. Then let the dish boil for another 7 - 9 minutes and we can turn off the burner. We cover the pan with a lid and let the soup brew for a few more minutes.
Step 8: serve the hodgepodge in Kazakh.
Using a scoop, pour Kazakh style hodgepodge into a deep plate, season with sour cream and sprinkle with fresh parsley. The soup turns out to be very tasty, rich and satisfying.
