Cooking carrot cookies:
Step 1: prepare the ingredients.
First of all, one to two hours before the start of the preparation of cookies, put all the necessary products on the kitchen table and give them the opportunity to warm themselves.
After the necessary time, peel the carrots, rinse it under cold running water and dry with paper kitchen towels.
After that, grind it with a blender or rub on a fine grater, transfer to a plate, wring it with your hands and leave it in that form on 12 - 15 minutesin order to stack juice.
Step 2: prepare the dough.
In the meantime, put the already softened butter in a deep bowl. Pour two types of sugar there: regular white and vanilla.
Set the food bowl under the mixer blades, turn it on at low speed and start mixing. As the mass thickens, we increase the speed of the kitchen appliance to the maximum.
As a result, the mixture should increase 2 - 2.5 times and change the color from yellow to bright white. We give this process approximately 10 - 12 minutes or beat until the sugar grains are completely dissolved.
Then, without turning off the mixer, add the chicken egg to the bowl and mix everything until smooth.
Now we introduce the sifted wheat flour, food baking powder and salt into the resulting mixture, while at the same time kneading a dough of medium density with a mixer.
Next, turn off the kitchen appliance, put the chopped carrots (without juice) in a bowl with the dough, and with the help of a tablespoon or a wooden kitchen spatula, mix everything to a uniform consistency.
After that, preheat the oven up to 180 degrees Celsius, cover the non-stick baking sheet with a sheet of baking paper or grease it with a thin layer of butter and proceed to the next step.
Step 3: form carrot cookies.
We wet our palms in cold running water, put a tablespoon of carrot dough on one of them, form a ball the size of a walnut or plum and lay it on a prepared baking sheet.
In the same way we sculpt the rest of the cookie until the dough is over, laying it out at a small distance from each other. Two centimeters of free space between products is quite enough.
Step 4: bake carrot cookies.
Put the cookies in the preheated oven and bake 15 - 20 minutes to blush. After the required time has passed, with the help of the kitchen tacks, we rearrange the baking sheet on a cutting board, previously laid on the countertop, and allow the baking to cool slightly.
Then, using a kitchen spatula, we shift the cookies onto a metal wire rack, completely cool and serve on a sweet table in dessert vases or on plates.
Step 5: serve carrot cookies.
After cooking, the carrots are cooled, optionally poured with sugar syrup or melted chocolate, spread on plates and served with hot drinks: tea, coffee, milk, and also cocoa. Such pastries are not only tasty, but also very healthy! Enjoy it!
