Greek onion cooking:

Step 1: prepare the ingredients.


First, prepare the products. We peel the middle celery root, and cut the small roots of the green onion. Then we wash the vegetables under cold running water and carefully dry with paper kitchen towels. After that, put them on a cutting board and grind. Chop green onions into small pieces or straws with a length of 3 to 5 centimeters.

We rub the celery root on a fine grater and lay out the slices in separate deep plates.

We cut the lemon into 2 halves and squeeze the juice from it using a manual juicer. We also spread spices, vegetable oil and salt on the table.

Step 2: prepare green onions in Greek.


Now we put the pan on a small fire, pour a tablespoon of vegetable oil and 2 tablespoons of purified water into it. When the resulting mixture warms up, put the chopped onion in it and simmer it 12 - 15 secondsstirring with a wooden kitchen spatula.
Then add the chopped celery root, lemon juice, spices indicated in the ingredients and another tablespoon of water to the pan. Mix all the ingredients of the dish until smooth and simmer under the lid 5 - 6 minutes.
Then turn off the stove and insist the braised onion yet 3 to 4 minutes. Then we transfer it to a clean plastic container, cool it and put it in the refrigerator, after closing the container with a lid. We stand the dish at minus temperature 15 - 20 minutes and serve to the table.

Chives are served in Greek chilled. It is mainly served with white bread, but very often salads complement this yummy. They make a vegetable pillow for fried cheese from such a beam. Mix with fried shrimp and bacon.
