Cooking a salad with tongue and mushrooms:
Step 1: prepare and cook beef tongue.
To begin with, put on a strong fire a deep pan with purified water and bring it to a boil. In the meantime, we wash the beef tongue, while stripping it with the edge of the knife from the dark coating.
Then lower the offal in boiling water. When it starts to boil again, reduce the temperature of the stove to an average level and add salt, laurel leaf, and black peppercorns to the pan to taste. Cooking language 2.5 - 3 hours.
After the required time has passed, we check its readiness with a table fork. If the teeth enter the meat smoothly, without pressure - the offal is ready! Using a slotted spoon, we transfer it to a deep bowl filled with ice-cold running water and hold it in it 2 - 3 minutes.
Then immediately clear the beef tongue from the skin. After such a simple procedure, it will easily separate from the meat. In those places where the peel has not come off well, carefully cut it with a knife.
Dry the prepared by-product with paper towels, put it on a cutting board and let it cool completely.
Step 2: prepare and stew mushrooms with onions.
While the language cools, we proceed to the preparation of other important products. We cut the root of each champignon, and peel the onion. Then we wash the vegetables under cold running water and dry them with paper kitchen towels to prevent excess moisture. After that, put them in turn on a cutting board and cut them into cubes or small pieces of arbitrary shape about 1 centimeter in size. Leave the slices on the board.
Then we put the pan on medium heat and pour a tablespoon of vegetable oil into it. After a while, dip the chopped vegetables into the heated oil and simmer them until soft, stirring with a kitchen spatula. This process will take approximately 12 - 15 minutes.
First, the vegetables will start juice and stew for about 5 - 6 minutes. Then they begin to gradually become covered with a delicate golden crust. When the onion becomes transparent, and the mushrooms acquire a soft texture, you can remove the pan from the stove. Transfer the fried vegetables into a deep bowl and proceed to the next step.
Step 3: prepare pickled cucumbers and boiled tongue.
Using a key for canned food, open a jar of pickled cucumbers. We get the right amount of vegetables from it, dry them with paper kitchen towels, put it on a cutting board and cut into cubes or a thin straw. Grind the beef tongue in the same way and transfer both slices into a bowl with mushrooms.
Step 4: bring the salad to full readiness.
We add mayonnaise there, to taste black ground pepper and, if necessary, a little more salt.
We mix all the components of the salad with a tablespoon until a homogeneous consistency, distribute it over the salad bowls and serve. Or we insist it in the refrigerator for a couple of hours and then serve it.
Step 5: serve a salad with tongue and mushrooms.
