Oyster soup


Ingredients for making oyster soup

Making oyster mushroom soup:

Step 1: prepare water and vegetables.


First of all, we take a deep four-liter pan, pour the right amount of purified water into it, put it on medium heat and bring the liquid to a boil.
In the meantime, we begin to prepare the products that are needed for the soup. We cut the rhizome with oyster mushroom, and peel the onions, carrots, potatoes and garlic.
We wash all vegetables with parsley under cold running water.
We immediately cut the potatoes with medium cubes up to two centimeters in size. We shift the cutting into a bowl and fill it with water so that it completely covers it. Now the potatoes will not darken until use.

Dry the remaining vegetables with paper kitchen towels, and shake off excess liquid with greens. Then, in turn, put the products on a cutting board and grind. Dice the onion into cubes up to one centimeter in size.

Rub carrots on medium or fine grater.

Mushrooms are cut in medium or large pieces of arbitrary shape.

Finely chop the greens and arrange the slices into deep plates.

Squeeze the cloves of garlic through a garlic squeezer into a small bowl. We also put vegetable oil, spices and salt on the kitchen table.

Step 2: boil the potatoes.


After the liquid in the pan boils, we transfer the chopped potatoes into it, after draining the water from it. We cook the vegetable until almost ready for 15 - 16 minutes.

Step 3: fry and stew vegetables.


We do not waste time in vain. Getting to frying and stewing other vegetables. We put the pan on medium heat and pour a little vegetable oil into it, two tablespoons is enough.
When the oil warms up, put the chopped onion in it and fry it 2 minutesstirring with a wooden kitchen spatula.
Then add chopped carrots to the pan and simmer it with onions until soft. It will take a few more minutes.

When the vegetables are soft and covered with a light golden crust, add mushroom slices to them and simmer them together 5 minutesstirring occasionally.
After the right time, put the garlic in the pan. Mix all the components of the vegetable dressing to a homogeneous consistency, simmer it One minute and remove from the stove.

Step 4: Cook the soup.


Vegetables were stewed and roasted for a short time, approximately 10 minutes. Therefore, we finish the potatoes within the time allotted to it.
Only after that we put the vegetable dressing in the pan, to taste salt, a mixture of peppers and a bay leaf.

Bring the soup to a boil and cook 5 - 7 minutes. Then add the right amount of cream to it.

We put chopped herbs and, if necessary, some more spices with salt.

We bring the first hot dish to a boil again, turn off the stove, cover the pan with a lid and insist on a soup of at least 7 to 10 minutes.
After that, with the help of a ladle, pour it into deep plates and serve it to the dining table.

Step 5: serve the oyster mushroom soup.


Oyster soup is served hot for lunch. This dish can be supplemented in several ways: sprinkle each serving of soup with freshly chopped herbs or cheese, and also serve it with croutons and dressing made from processed cheese. Any of these options would be perfect. Enjoy a delicious and simple meal!
