Lentil Cutlet Ingredients

Cooking Lentil Cutlets:

Step 1: Prepare the ingredients.


Lentils for cooking cutlets can be prepared in two ways: first - pour lentils with water (two glasses of water for one glass of lentils) and cook until cooked over medium heat; the second - lentils are soaked in cold water for at least 10 hours.
The second cooking method saves more nutrients, since in this case lentils undergo only one heat treatment - frying. Cutlets made from boiled lentils are softer and more tender.
There are three types of lentils on sale: green, cinnamon and red. The cooking time is different - from 20 to 40 minutes. The red lentil is the fastest to cook, it boils to a puree state. Green and cinnamon stay in shape longer.
So, boil lentils for cutlets until cooked and cool or pre-soak, and then after 10 hours, rinse with running water.

Peel the onion and chop it in any way convenient for you, we will still chop it with a blender or in a food processor.

Wash the lemon, pour boiling water over it, dry it with a paper towel and rub the zest on a fine grater. Put the lemon zest on a plate.
Lemon zest is not an ordinary ingredient, usually it is not added to lentil cutlets, but it greatly improves the taste of lentils, making it more refined.

Step 2: Cook the lentil patties.


In the bowl of the combine we put lentils and chopped onions, add the eggs. In a couple of minutes, the combine will grind them into a homogeneous mass. We shift it into a bowl, add crackers and lemon zest, mix. Add salt and spices to taste, mix again.

Put the pan on fire, pour vegetable oil and heat over medium heat. Form small cutlets from lentil cutlet mass and put them in a pan. Fry on both sides for about 4-5 minutes each until a light brown crust forms. Put the finished lentil patties on a dinner plate.

Step 3: Serve the lentil patties.


Lentil cutlets are very satisfying, so they can be served without a side dish, with sour cream, favorite sauce, a salad of fresh vegetables and herbs.

Recipe Tips:

- In minced meat for lentil cutlets, you can add finely chopped greens - parsley or dill.

- A very unusual taste is obtained if crushed walnut is added to the lentil mass, 2-3 tablespoons are enough.
