Cooking Bird's milk cake:
Step 1: prepare the dough.
First of all, turn on and preheat the oven up to 180 degrees Celsius. Then grease 2 round baking dishes with a thin layer of butter and sprinkle with flour.
Now we drive the eggs into a deep bowl, add granulated sugar, vanilla sugar and put it under the mixer blades. We turn on the kitchen appliance at medium speed and begin to mix the products. Increase the speed of the mixer to the maximum as the egg mass thickens.
When it acquires a dense texture and changes color from yellow to crystal white, we introduce wheat flour into the bowl. We act slowly, adding spoon after spoon, while kneading a dough of medium density.
Step 2: bake biscuit cakes.
Then divide the dough into two equal parts. We lay them out according to the forms prepared for baking, level them with a kitchen spatula so that the layer thickness is no more than 1 centimeter, and send the dough into a preheated oven on 7 to 10 minutes.
After the right time, check the readiness of baking with a wooden toothpick. If it comes out of dry biscuit dough, the basis for the cake is ready.
We put kitchen gloves on our hands, remove the forms from the oven and put them on cutting boards. Cool the cakes to room temperature in the molds.
Step 3: preparing starch, gelatin and a water bath.
In the meantime, turn on 2 burners on a medium heat, put a kettle with clean water on one and a deep saucepan half full with plain running water on the second.
Now we take a small bowl, pour a tablespoon of pure cold water into it and add a tablespoon of potato starch. Mix them to a homogeneous consistency.
After pour gelatin into a small stewpan, pour 150 milliliters of boiling water, mix and leave it in this form on 20-30 minutes.
Step 4: prepare the cream - often the first.
Then we separate the egg whites from the yolks in separate deep heat-resistant bowls. In a bowl with yolks, add a glass of sugar, vanilla sugar and rub them with a tablespoon. After that we pour in milk, starch diluted with water and mix the products with a whisk until smooth.
Set this bowl in a pot of boiling water and cook the egg-milk mixture until thickened, stirring constantly.
When the mass in the bowl becomes thick, remove it from the pan and cool the resulting mixture to room temperature.
Then we add softened butter to it and beat the products with a mixer until splendid.
Step 5: prepare the cream - part two.
Now put the stewpan with steamed gelatin on the smallest fire and heat it, stirring with a tablespoon. Do not bring to a boil! After, we filter the gelatin mass into a deep plate through a fine mesh sieve.
Then pour a glass of sugar in a bowl with egg whites and beat them with a mixer until a snow-white stable foam. This process will take approximately 12 - 15 minutes. When the proteins have the desired texture, add strained gelatin to them.
At the same time, we do not stop the mixer, we simply reduce its speed to medium and after that we again evade to high. Mix the products until smooth. 3 to 4 minutes - the second part of the cream is ready.
Add the first part to it and again mix everything until a homogeneous consistency.
Step 6: form the cake "Bird's milk" - part one.
By the end of the preparation of the cream, the biscuit cakes are completely cooled, it's time to start forming the cake. We take another deep baking dish with removable sides, spread the biscuit cake on the middle of its bottom and fill it with the finished cream.
On top of the cream, carefully lay out the second biscuit base. Tighten the shape with plastic wrap and put in the refrigerator for 4 - 5 hours.
Step 7: prepare the chocolate icing.
After 4.5 hours start cooking glaze. We return to the third step and also prepare a water bath. During this time, we lay out the chocolate bar, crushed into smaller pieces in a deep heat-resistant bowl, you can simply break it with your hands. There we add the butter and set the bowl in a pot of boiling water.
Stirring the products with a whisk, bring them to complete melting and a homogeneous liquid consistency. Then we rearrange the bowl on the countertop and cool the finished chocolate icing to room temperature.
Step 8: form the cake "Bird's milk" - part two.
Exactly through 5:00 You can proceed to the final stage of cake preparation. Its design depends on your desire, you can do it in the traditional way - fill the top layer of biscuit with iced coats. You can remove the removable side of the mold and grease the entire cake with chocolate mass.
After the fragrant dessert is decorated with chocolate, put it in the refrigerator again on 1 hour, then we take it out and serve it at the sweet table.
Step 9: serve the bird's milk cake.
