Cooking mackerel with potatoes in foil in the oven:
Step 1: prepare the mackerel.
Buy a gutted mackerel or clean it at home by making an incision along the abdomen. After you clean the fish from the insides, you need to cut the gills and remove the fins, as well as cut the tail. Wash cleaned mackerel with cool water and pat dry with disposable paper towels. Rub the fish inside and out with salt and suitable spices.
Step 2: prepare the potatoes.
Rinse the potatoes, peel them and cut into thin circles. Dry potato slices with paper towels.
Step 3: we stuff mackerel.
Place finely chopped greens and a few slices of lemon inside the mackerel. Such a filling will give the fish an additional aroma and taste by soaking the mackerel from the inside.
Step 4: bake mackerel with potatoes in foil in the oven.
Spread a piece of foil on the countertop twice as large as the fish. Lay potato slices in the middle and sprinkle them with salt and spices, not forgetting that the fish is already salted. Place the mackerel stuffed with greens and lemon upside down on the potatoes. Wrap the edges tightly and transfer everything to a heat-resistant baking sheet.
Bake mackerel with potatoes in preheated 170-180 degrees oven for 20-30 minutes (depending on the size of the fish). Thanks to the foil, the mackerel remains juicy, the potatoes are boiled in fish juice, saturated with aromas of spices, herbs and lemon.
Attention: the peculiarity of cooking in the foil is that the fish remains pale, but if you want to get a baked crust on it, then you should open the top of the foil a few minutes before cooking, put the grill on the oven, add temperature and bake some more that time.
Step 5: serve the mackerel with potatoes.
Mackerel with potatoes, baked in foil in the oven, comes out very tasty and useful at the same time, since we do not use oil at all for its preparation. Serve this fish hot, immediately after baking. An additional side dish is not needed, as there is potato, but it’s very possible to decorate the fish with fresh herbs or offer sauerkraut or pickles to it.
Enjoy your meal!
