Cinnamon roll


Ingredients for Making Cinnamon Roll

Dough:

Making cinnamon roll:

Step 1: prepare the dough.


Pour the required amount of purified water into a small saucepan and put it on medium heat. Warm up the liquid up to 35 - 38 degrees, no more! Otherwise, the dough will not work!
When the water heats, pour it into a deep bowl and add dry granular yeast to it. We mix the ingredients to a homogeneous consistency and put the dough in a warm place (near the included stove) on 10 - 12 minutes.

Step 2: prepare milk with butter.


Now pour the pasteurized whole milk into the same saucepan, put the butter, salt and sugar, which are intended for the test.
We mix the products with a tablespoon to a homogeneous consistency and put the pan on medium heat.
Heat the resulting mixture to 45 - 50 degreesshe must be hot. If desired, these ingredients can be heated in the microwave and the temperature can be checked using a confectionery thermometer.

Step 3: combine the milk-butter mixture with cottage cheese.


When the milk-butter mixture warms up to the desired temperature, pour it into a clean, deep bowl. We put the cottage cheese there and beat the products with a hand blender until a smooth, creamy consistency.
Then add the chicken egg and yeast dough to this bowl. Re-mix everything until smooth with the same blender or wooden kitchen spoon.

Step 4: prepare the curd dough.


Now add the wheat flour to the bowl with whipped products. We do it slowly, through a sieve with a fine mesh, while kneading the dough with a wooden spoon.
When the kitchen appliance ceases to help, we transfer the contents of the bowl to the working surface of the kitchen table. Add the remaining flour and knead a soft dough that does not stick to your hands.

We lubricate the bowl in which the batch is made with vegetable oil, one tablespoon is enough. Then we put dough rolled into a ball into it, tighten the container with plastic wrap and put in a warm place for 1 - 1.5 hours. During this time, the volume of the test will increase at least 2 times.

Step 5: prepare the filling.


Meanwhile, pour sugar, cinnamon into a deep plate and mix them with a tablespoon to a homogeneous consistency. The resulting mixture will be filling.

Step 6: form the cinnamon rolls.


After the desired time has elapsed, i.e. after 1 - 1.5 hours, turn on and start heating the oven up to 180 degrees Celsius. Then we cover two non-stick baking sheets with sheets of baking paper.
Now sprinkle the tabletop with a layer of wheat flour. Then we knead the dough directly in the bowl, roll it with a “sausage”, transfer it to the table and divide it into 6 equal parts using a kitchen spatula.

Using a rolling pin, we roll one layer of dough into a long rectangle thick from 3 to 5 millimeters. Sprinkle its surface with sugar and cinnamon filling.

We turn the dough into a roll and transfer it to a baking sheet prepared for baking. In the same way, we form the remaining rolls.

We put them so that between the products was 2 - 3 centimeters free space. Sprinkle a roll of flour with a thin layer of flour, cover them with plastic wrap and put in a warm place on 1 hour.

Step 7: prepare the grease for the rolls.


While the rolls are infused, prepare the grease. She will give the pastry a charming blush. In a deep plate we put one egg white, pour a teaspoon of sour cream and pour a teaspoon of granulated sugar. Mix the products with a table fork until a homogeneous consistency and complete dissolution of sugar.

Step 8: bake cinnamon rolls.


An hour later, grease the riser rolls with sour cream and egg mixture with a baking brush and send them to the preheated oven for 25 - 30 minutes.
Check the readiness of the muffin with a wooden kitchen skewer. Insert its end into the flesh of baking and get it. If the stick comes out dry - rolls are ready.

We put on kitchen gloves, take the baking sheet out of the oven and put it on a cutting board, previously laid on the countertop.
With the help of 2 kitchen blades, we transfer the baking to a metal wire rack, grease them with a small piece of butter and leave them in this form for 5 minutes.
Then we cover rolls with a kitchen towel so that the gap remains, and cool them to room temperature.

Step 9: serve the cinnamon roll.


Cinnamon roll is served at room temperature. Before serving, it is cut into portioned slices with a thickness of 3 to 5 centimeters and spread them on a large flat dish. This baking is good without any additives, but if desired, it can be savored with sour cream, cream, jam, condensed milk or your favorite cream. Enjoy it!

Recipe Tips:

- Rolls from this type of dough should be stored in plastic bags or cling film.
