Ingredients for making cannelloni with minced meat

Stuffing and pasta:

  1. Cannelloni 10-12 pieces
  2. Steam beef (tenderloin) 400 grams

  6. 4-pronged garlic

Bechamel sauce:

  1. Pasteurized whole milk 400 milliliters
  2. Wheat flour 30 grams
  3. Butter 30 grams

Cooking cannelloni with minced meat:

Step 1: prepare the vegetables.


First of all, boil a full kettle of water. During this time, peel the onions and garlic from the husks and wash them with tomatoes under cold running water. On each tomato we make a cruciform incision, put them in a deep bowl and pour boiling water over it. We stand tomatoes in hot water 1 - 2 minutes. Then lower them into a bowl of cold water until completely cooled.

Then remove the peel from the tomato, transfer their pulp to a clean blender bowl, grind it to a puree consistency and pour the resulting mass into a deep bowl.

Dry the onion with garlic with paper towels, take turns placing them on a cutting board and chop into small cubes. We leave these slices on the board.

Step 2: prepare the meat.


Now we take a tenderloin of steamed beef, rinse it under cold running water and dry it with paper towels.
Then we put the meat on a clean cutting board and clean it of the film, cartilage, veins, as well as small bones that could remain on the beef after chopping the carcass.

Cut the tenderloin into medium cubes.

Grind them into minced meat in any convenient way, for example, using a blender, food processor or meat grinder. Transfer the ground meat into a deep bowl.

Step 3: prepare hard cheese.


For this dish, you can use any cheeses of hard varieties, in our case - Parmesan. Rub it on a fine or medium grater into a deep plate and proceed to the next step.

Step 4: prepare the filling.


Now put on a medium heat pan and pour olive oil into it. When it warms up, put the onion and garlic on the bottom of the pan. We simmer them until transparent and lightly coated with a golden crust, stirring with a kitchen spatula. It will take no more 2 minutes.

After the vegetables are soft, add ground beef to them.

We break the meat with a kitchen spatula into smaller pieces and fry 10 minutes, stirring occasionally.

Then add chopped tomatoes to the fried minced meat and salt with black pepper to taste.

Stir all the components of the filling to a homogeneous consistency and simmer it 5 - 7 minutes until partial evaporation of moisture. After we set the pan aside and begin to cook Bechamel sauce.

Step 5: prepare the Bechamel sauce.


Put a piece of butter in a small stewpan and put it on medium heat. When the butter has melted, pour sifted wheat flour into it.

Fry it for one minute, stirring with a silicone kitchen spatula.

After the required time has passed, we pour the whole pasteurized milk into the stewpan. Thoroughly mix it with a whisk with fried flour so that flour lumps do not form.

After we reduce the fire to a level between small and medium. Cook the sauce until thickened, without stopping stirring. Then add salt, black pepper to the flavor mass to taste, cook the sauce for another minute and turn off the stove.

Step 6: stuff and bake cannelloni.


Next, turn on and preheat the oven up to 200 degrees Celsius. Using a teaspoon, fill the cannelloni with an almost cooled filling. It’s not worth tamping hard, but you also don’t need to leave the paste half empty.

We spread the tubes in a wide baking dish, fill them with Bechamel sauce and send the form to the preheated oven. Bake a dish 20 minutes.

20 minutes latersprinkle half-prepared cannelloni with chopped cheese and bake them for another 10 minutes. Then we put kitchen gloves on our hands, remove the form from the oven and put it on a cutting board previously laid on the kitchen table.

Using two kitchen shovels, we spread the cannelloni portions on plates and serve them to the table.

Step 7: serve cannelloni with minced meat.


Cannelloni with minced meat is served hot. As a complement to this dish, you can offer a salad of fresh vegetables or pickled vegetable slices. Enjoy a delicious meal!

Recipe Tips:

- Very often, filled cannelloni is poured with Bechamel sauce, sent to the refrigerator and kept in this form for several hours. After baking, such a paste becomes softer, almost tender.

- A set of spices can be supplemented with such dried herbs and spices as basil, tarragon, caraway seeds, coriander, parsley, dill.

- Instead of olive oil, you can use refined sunflower oil.

- At will, you can use ready-made minced meat from any kind of meat.
