Chicken cutlets with rice and zucchini

Cooking chicken cutlets with rice and zucchini:

Step 1: Prepare the zucchini, onions and garlic.


Peel the garlic and grate or use the garlic. We shift the garlic into a small plate.

Finely chop the green onion and transfer to the garlic. If there is no green onion, you can take ordinary onion. It is better to grate, large pieces may not have time to fry.

Zucchini grate, transfer to a bowl and salt. Mix and let stand for about 10 minutes to let the juice run.

Squeeze the excess liquid from the zucchini and transfer to another bowl. We do this in order to make the cutlet mass a good consistency. If you do not do this manipulation with zucchini, the liquid that we squeezed out will fry the cutlets during frying and they will be stewed in zucchini juice, and not be fried in oil.

Step 2: Cooking chicken cutlets with rice and zucchini.


In a bowl to squeezed squash add rice, minced chicken, egg, prepared onions and garlic. Mix thoroughly to obtain a uniform cutlet mass. Add salt and black pepper.

Form round or oval small cutlets with your hands. So that the cutlet mass does not stick to your hands, moisten them in water. Bread cutlets in breadcrumbs.
Place the pan over medium heat, pour a little vegetable oil and heat for about a minute or two. Put the chicken cutlets in a pan in hot oil and fry on both sides until a light brown crust forms. About 5-7 minutes on each side, depending on the size and thickness of the cutlets.
For more confidence in the readiness of the meat, especially if cooking for children, cover the pan at the end of the frying pan and leave it on for about 5 minutes. Transfer ready-made cutlets to a dinner plate or flat dish.

Step 3: Serve chicken cutlets with rice and zucchini.


Serve chicken cutlets with rice and zucchini with fresh vegetable salad and herbs, sour cream or your favorite sauce. Especially tasty with mushroom and cheese.
