Cooking puff braids:
Step 1: prepare the dough.
In order not to take away your precious time, you can already buy ready-made puff pastry. Typically, in a package, the test layer comes in one thin piece, but frozen. Therefore, we release it from the packaging and put it in a free plate. Set the dough aside to reach room temperature.
Step 2: prepare hard cheese.
While we are defrosting the dough, we will prepare other ingredients. We spread hard cheese on a cutting board and, using a knife, cut into small thin plates. Shredded cheese is transferred to a clean plate.
Step 3: prepare smoked chicken.
Put the smoked chicken breast on a cutting board and cut into small pieces. Attention: slice the ingredient with care, as the breast usually comes with bone. Shredded chicken is transferred to a clean plate.
Step 4: prepare the egg yolk.
Pour the egg yolk into the bowl, slightly add it and, using a fork, beat until a homogeneous mass is formed. Important: Before lubricating the dish with the whipped component, you will need to shake it again with a fork.
Step 5: prepare the puff pigtails.
As soon as the dough unfreezes and becomes soft, put it on the kitchen table, slightly crushed with flour. Using a rolling pin, we slightly roll out the test layer in one direction. Usually the finished purchase dough looks like a rectangular plate, so we cut it with a knife into several parts of the size that you want to make pigtails. I usually divide the dough into three parts.
After that, along the large sides of each plate, using the same knife, we make small parallel incisions. Attention: the notch should be such a length so that, in the middle of the plate, there is room for exactly the filling. Now in the center of the piece of dough we spread the slices of the brisket with the first layer, and the second - pieces of hard cheese.
To form a pigtail, we wrap the incisions inside the dish whip on the whip, slightly pressing the edges with your fingers. Repeat the same procedure with the remaining segments of the test. We cover the baking sheet with baking paper, and on its surface we carefully lay out the puff pigtails. Using a pastry brush, grease the baking surface with whipped yolk to make the dish golden. And now we put the baking sheet in a preheated oven to the temperature 200 ° C and bake the pigtails for 15-20 minutes to rosy.
After the allotted time, turn off the oven, and get the baking dish using kitchen oven mitts. Set aside to cool slightly.
Step 6: serve the puff pigtails.
As soon as the flaky pigtails are slightly cooled, transfer them to a flat serving dish, cut into portioned pieces and serve to the dining table. Baking, though hearty, but more suitable for treating to tea or breakfast.
- Instead of smoked chicken breast, you can add boiled chicken, pork or beef to the filling, as well as various types of sausages.
- Instead of hard cheese, you can also grate cream cheese or even smoked Suluguni cheese in the filling. Then the dish tastes with smoke.
- You can add any ingredients to your taste to your taste. For example, it can be cottage cheese, grated through a sieve, with chopped fresh dill.
