Making a salad with mussels and rice:

The easiest way to make perfect crumbly rice is to do it in a pan. Rice is best to take good - basmati or jasmine. Put the frying pan on medium heat, put the butter - half the amount put on the recipe, melt it. Pour rice into the pan and fry in butter for about 5 minutes. Rice will absorb oil and become translucent. Add two cups of warm boiled water. Important! Be sure to heat the water so that there is no sharp temperature drop. Salt to taste.

Cover the pan and cook the rice over low heat for about 10-15 minutes. If you make the fire too large, the water will boil away quickly, and the rice will remain moist; if too small, the rice will fall apart.

It is not necessary to stir the rice, otherwise it will not turn out friable. As soon as you see that there is only a little water left, turn off the heat and leave the rice to infuse and cool. As a result, you get beautiful white and crumbly rice - just what you need for a salad.
If it is more convenient and more convenient for you to cook rice in a saucepan - do as you prefer, most importantly, so that you get the right rice.

Step 2: Prepare the onion.


Peel the onion and cut into half rings. If you like the record better - no problem, cut it as you like.

Step 3: Cook the mussels.


It is better to cook mussels along with rice, so it will take less time to prepare the dish. Rice still does not require a lot of attention.
Frozen mussels are sold already peeled. They need to be thawed at room temperature. The process is better not to speed up, so as not to spoil their taste. Put the pan on medium heat, melt the remaining butter and fry the mussels in it for about 5 minutes, add the onions and fry everything together for another 5 minutes. Add white wine and 2-3 tablespoons of warm boiled water, salt to taste and add mussels for a little about 15 minutes until tender. The sauce, which we have made from the juice of mussels, butter and white wine, will become a salad dressing.

Step 4: Cooking a salad with mussels and rice.


In a large bowl, to make it convenient to interfere, put rice and mussels. Add salt and black pepper to taste. Stir, add chopped parsley and chives. Everything, the salad is ready.

Step 5: Serve the salad with mussels and rice.


Put the prepared salad with mussels and rice into plates and serve. Despite the name, it may well be an independent dish. It can be served at the festive table or for a romantic dinner for two (mussels have the properties of an aphrodisiac).

Recipe Tips:

- In the recipe, we used only the basic components. At will, the salad can be made more complex. For example, adding other seafood - squid and shrimp, boiled chopped egg - will turn out to be more satisfying.

- Arugula will be a good addition to the salad. She has a pleasant spicy, slightly bitter taste, which goes well with mussels and rice, but then parsley is better not to use.
