Salad "Minsk"


Ingredients for the preparation of Minsk salad

Preparation of Minsk salad:

Step 1: Prepare the potatoes.

First of all, we pour clean water into the pan and put it on a strong fire. In the meantime, we wait for it to boil, carefully rinse the potatoes under running water.

After we spread it directly with the peel in a pan with boiling water, reduce the heat to medium and cook the vegetable for about 10 minutes. Then salt and continue cooking 15 to 20 minutes. After the required time has passed, we check whether the potatoes are cooked: we pierce the pulp with a fork (knife) and if it easily enters, then our vegetable is ready, and if not, continue to cook for about 5 minutes, after which we check the readiness again.
Next, carefully drain the hot water from the pan, and leave the potatoes to cool.

Step 2: Chop the onion.

Remove the husk from the onion, rinse under cold running water and lay on a cutting board. With a sharp knife, cut into middle pieces of arbitrary shape and transfer to a plate.

Step 3: Cut the champignons.

We pass to mushrooms. It is not necessary to wash the mushrooms, just wipe them with a kitchen towel, but if in doubt, rinse under running water and then dry quickly. These mushrooms easily absorb moisture and become less tasty. So, put them on a cutting board, update the cut at the legs and cut into thin layers. We shift the crushed champignons into a separate plate.

Step 4: Fry the onion with mushrooms.


Pour vegetable oil into a pan and put on medium heat. After the frying pan is heated, put the chopped onion. Fry until soft. 2 minutes, periodically mixing with a kitchen spatula so as not to burn. And then add the mushrooms.

We extinguish them together until the moisture evaporates and a beautiful golden crust forms.

Step 5: Cooking the Salad

Go back to the potatoes. During this time, it has cooled and you can remove the peel. After, we cut it on a cutting board with either beautiful cubes or small plates. Now all the components of the salad are ready and you can combine them together.

In a deep bowl or a beautiful salad bowl we transfer the fried champignons with onions, potatoes, sauerkraut, salt and pepper to taste. Stir with a tablespoon and you can consider our dish ready.

Step 6: serve the salad.


Minsky salad is served chilled along with slices of white or rye bread. It is pleasant to savor it with homemade compotes or freshly squeezed juices. But you can decorate such a dish with fresh chopped greens of dill or parsley.

Recipe Tips:

- The salad will be tastier if you fry the mushrooms with onions in olive oil.

- Often such a salad is seasoned with a mixture of vegetable oil, vinegar and sugar to taste.
